Introducing our child’s absolute favorite dish! It’s a wonderfully soft and flavorful egg dish that they can happily finish, even when they’re not feeling well or are a bit under the weather. The exterior is firm like a rolled omelet, while the inside is as moist and tender as steamed eggs, making it a perfect finger food for little ones still mastering utensil use. You can also finely chop and add tomatoes for an extra burst of flavor.
Ingredients
- Spinach, 70g
- Tomato, 50g
- Cheese slice, 1
- Eggs, 2
Cooking Instructions
Step 1
Thoroughly wash the spinach. Blanch it in boiling water for about 20 seconds, then immediately rinse under cold water. This helps to maintain its vibrant green color and a pleasant crispness. Squeeze out excess water firmly by hand.
Step 2
Place the squeezed spinach on a cutting board and finely chop it with a knife. Chopping it into small, manageable pieces will make it easier for children to eat.
Step 3
Crack the 2 fresh eggs into a mixing bowl. Use a fork to gently whisk the eggs until the yolks and whites are well combined. Try not to over-whisk and create too much foam.
Step 4
Add the finely chopped spinach and the cheese, torn into small pieces, to the whisked eggs. Stir with a fork until all ingredients are evenly distributed throughout the egg mixture. Ensure the cheese is well separated and mixed in.
Step 5
Fill a medium-sized muffin tin or small oven-safe molds about halfway with the egg mixture. Gently place thinly sliced tomatoes (about 0.5cm thick) on top of the mixture. The tomatoes add a lovely visual appeal and a hint of fresh flavor.
Step 6
Bake in a preheated oven at 170°C (340°F) for approximately 20 minutes. The baking time may vary slightly depending on your oven. You can check for doneness by inserting a skewer; it should come out clean. Let the frittatas cool slightly before serving to your child.
