Soft and Delicious Seasoned Dried Shredded Squid (Jinmichae Muchim)

Easily make incredibly soft and moist seasoned dried shredded squid at home. It’s perfect as a side dish for rice or as a savory snack.
Main Ingredients
- 300g dried shredded squid (Jinmichae)
- 3 Tbsp mayonnaise
- 1 Tbsp chili oil or cooking oil
- 1 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp soy sauce for seasoned dishes (Mat-ganjang)
- 3 Tbsp grain syrup (Jocheong)
- 1 Tbsp cooking wine (Miseul)
- A pinch of toasted sesame seeds
Cooking Instructions
Step 1
First, prepare 300g of dried shredded squid (Jinmichae). To make the texture softer and less tough, rinse the Jinmichae under hot water, rubbing it vigorously with both hands. This process removes any impurities and significantly softens the chewy texture.
Step 2
After washing, cut the Jinmichae into bite-sized pieces. Using scissors to cut them into lengths of about 2-3 cm will allow the seasoning to be absorbed more evenly, resulting in a tastier dish.
Step 3
Place the prepared Jinmichae into a large resealable plastic bag. Squeeze in 3 tablespoons of mayonnaise. Seal the bag tightly and knead the contents with your hands. Ensure the mayonnaise coats the Jinmichae evenly. Let it sit for at least 10 minutes to allow the mayonnaise to penetrate the squid. This step is one of the secrets to making the Jinmichae extra soft and moist.
Step 4
In a small pot or frying pan, heat 1 tablespoon of chili oil or cooking oil. Add all the seasoning ingredients: 1 tablespoon of gochugaru, 1 tablespoon of Mat-ganjang, 3 tablespoons of Jocheong, and 1 tablespoon of Miseul.
Step 5
Turn the heat to very low and stir the seasoning ingredients as they heat up. Keep stirring to prevent the seasoning from burning. Simmer gently until the sauce thickens slightly. Cooking the seasoning like this adds a much richer flavor.
Step 6
Once the seasoning sauce is nicely cooked, turn off the heat. Add the Jinmichae, which has been marinating in mayonnaise, to the pot or pan with the sauce. Mix everything together thoroughly, ensuring the sauce coats the Jinmichae evenly. Toss well to distribute the sauce.
