Soft and Delicious Bacon and Potato Pancakes
Bacon and Potato Pancakes that are Gentle to Eat
As I’m currently undergoing dental treatment, eating has been a bit challenging. So, I’ve prepared a recipe for a softer dish that’s still incredibly flavorful.
Main Ingredients- 300g Potatoes (about 2 medium-sized)
- 45g Carrot (about 1/4 small carrot)
- 50g Onion (about 1/4 small onion)
- 3 strips thick-cut Bacon
- 3 cloves Garlic
- 1 piece Butter (approx. 10g)
- 2 Tbsp grated Parmesan cheese
- A little Cooking oil
- 3 Tbsp Potato starch
Seasoning- A pinch of Salt (for boiling potatoes and seasoning the stir-fry)

Cooking Instructions
Step 1
First, wash the potatoes thoroughly and peel them. Place the potatoes in a pot, add enough water to cover them, and add a pinch of salt (about 1/2 tsp). Boil until a fork can easily pierce the potatoes, indicating they are soft (about 15-20 minutes).
Step 2
While the potatoes are boiling, finely mince the carrot and onion. Using a grater or knife, chop them as finely as possible for the best texture.
Step 3
Finely chop the bacon, preferably the less fatty parts, and mince the garlic. Letting the minced garlic sit for a moment can enhance its aroma.
Step 4
Heat a pan over medium-low heat and add a little cooking oil. Add the minced bacon and garlic and stir-fry until fragrant, being careful not to burn them. The bacon fat will render out, creating a delicious aroma with the garlic.
Step 5
Once the bacon and garlic are fragrant, add the minced carrot and stir-fry together. When the carrot starts to become slightly translucent, add the minced onion and continue to stir-fry until the onion is also translucent. At this stage, add a tiny pinch of salt to season the mixture.
Step 6
It’s best to mash the boiled potatoes while they are still warm. Drain them thoroughly in a colander to remove excess hot water, then use a potato masher or fork to mash them until completely smooth with no lumps. Lumps can prevent the pancakes from holding their shape.
Step 7
To the warm mashed potatoes, add the stir-fried bacon, carrot, onion, and garlic mixture. Mix everything together well. Then, add the potato starch and 1 tablespoon of Parmesan cheese (or use 2 tablespoons if you prefer). Knead the mixture with your hands until it becomes cohesive and slightly sticky, similar to making dough. If the mixture feels too wet, you can add a little more potato starch.
Step 8
Scoop out portions of the dough with a spoon and flatten them into round pancake shapes with your palms. Avoid making them too thick, so they cook through evenly and have a pleasant texture.
Step 9
Finally, melt the butter in a pan over medium-low heat. Once the butter is melted, carefully place the shaped potato pancakes in the pan. Cook them slowly, turning them occasionally, until they are golden brown and slightly crispy on the outside. Adjust the heat as needed to prevent burning.
Step 10
Arrange the perfectly cooked Bacon and Potato Pancakes on a serving plate. For an extra touch of flavor, you can sprinkle a little more Parmesan cheese on top. Enjoy them immediately while they are warm!
