Smoky Squid Stir-fry with Smoked Paprika

This is a delicious squid stir-fry where the squid is marinated in a flavorful sauce enhanced with smoked paprika, then quickly cooked to perfection. It’s especially delightful served with rice and has an addictive spicy-sweet taste that keeps you coming back for more.

Main Ingredients

  • 2 Squids, cleaned
  • 1/2 Zucchini
  • 1/3 Carrot
  • 1/4 Onion
  • 1 cup Cabbage (adjust to your preference)
  • 1/3 Green onion stalk

Cooking Instructions

First, prepare all the vegetables except for the squid. Wash and trim the zucchini, carrot, onion, and cabbage. If you don’t have cabbage, you can omit it, but it adds a nice crispness.

Cut all the prepared vegetables into bite-sized rectangular pieces. Cutting them into similar sizes ensures they cook evenly and are easy to eat.

Place all the cut vegetables into a large mixing bowl. Add the chopped green onion to the bowl as well. We will marinate all these vegetables together before stir-frying.

Clean and wash the squid thoroughly. Then, slice it into bite-sized strips. If you’re using whole squid, you can remove the innards completely and then slice the body into rings if you prefer. Using pre-cleaned squid can save you time.

Now, let’s make the flavorful sauce. Add gochujang, gochugaru, smoked paprika powder, soy sauce, minced garlic, cheongju (or mirin), sugar, and black pepper to the bowl with the vegetables. Gently mix everything with your hands until well combined and the vegetables are evenly coated. Marinate this mixture in the refrigerator for at least 1 hour. This allows the flavors to meld beautifully.

Heat a lightly oiled pan over high heat. Add the marinated vegetables and squid to the hot pan. Stir-fry quickly over high heat. Squid cooks very fast, so avoid overcooking it to keep it tender. Once the squid and carrots are cooked through, it’s ready. The other vegetables will cook quickly.

Once everything is cooked, turn off the heat. Drizzle with sesame oil for an aromatic finish and give it a final mix. This squid stir-fry is delicious served immediately. You can also save some of the marinated mixture to cook another day. Alternatively, serve it over cooked noodles for a spicy squid noodle dish, or enjoy it as a fantastic accompaniment to drinks.
