I had some leftover smoky duck and a bunch of Korean green peppers that I’d bought with the intention of making quail egg dishes. I decided to stir-fry them together to create a delightful side dish. These Korean green peppers are wonderfully spicy right now, and when stir-fried with the smoky duck, they create an incredibly delicious flavor combination.   • Smoky duck 200g
  • Korean green peppers 15 pcs
  • Whole garlic cloves 5 pcs
  • Sesame oil 1 Tbsp
  • Sesame seeds a pinch

Sauce

  • Soy sauce 2 Tbsp
  • Mirin or cooking wine 2 Tbsp
  • Water 1 Tbsp
  • Oyster sauce 1 Tbsp
  • Sugar 1 Tbsp
  • Oligosaccharide 1 Tbsp

Cooking Instructions

Step 1

First, let’s prepare the delicious sauce for our stir-fry. In a bowl, combine 2 Tbsp soy sauce, 2 Tbsp mirin or cooking wine, 1 Tbsp water, 1 Tbsp oyster sauce, 1 Tbsp sugar, and 1 Tbsp oligosaccharide. Mix them well. This sauce will have a flavor profile similar to a teriyaki sauce.

We’re using 15 Korean green peppers. If you enjoy their mild spiciness, 15 is great, but about 10 peppers would also yield a good balance. Wash the peppers thoroughly under running water and trim off the stems. Cut smaller peppers in half, and longer ones into about 3 equal pieces.

Use about 5 cloves of garlic. Slice the garlic based on its size. Halve smaller cloves, and slice larger ones into about 3 thin, flat pieces. Avoid slicing them too thinly so they don’t burn easily.

Cut the 200g of smoky duck into bite-sized pieces. This makes it easier to eat, especially for children.

Now, let’s start stir-frying! Heat a pan over medium-low heat and add the smoky duck. Smoky duck releases a lot of its own fat, so you don’t need to add any cooking oil. Stir-fry until the duck is golden brown.

Once the smoky duck has rendered enough fat, add the sliced garlic cloves and stir-fry them together. The garlic will become fragrant as it fries in the duck’s fat.

When the garlic is almost cooked and lightly browned, add the Korean green peppers. It’s crucial not to overcook the peppers at this stage. To maintain their crisp texture and fresh flavor, stir-fry them only briefly before adding the prepared sauce.

Here’s a key tip for achieving a great flavor! Push the stir-fried ingredients to one side of the pan. Pour the prepared sauce into the empty space and let it bubble and reduce slightly. While you could pre-boil and reduce the sauce separately, this method is much simpler and still yields a delicious, concentrated flavor.
