  • 600g Smoked Duck
  • 1 bunch Fresh Chives
  • 1 Onion

Chive Salad Dressing

  • 5 Tbsp Soy Sauce
  • 2 Tbsp Sugar
  • 3 Tbsp Vinegar
  • 2 Tbsp Gochugaru (Korean chili flakes)
  • 1 Tbsp Minced Garlic
  • 1 Tbsp Sesame Oil
  • 1 Tbsp Toasted Sesame Seeds

Cooking Instructions

First, thinly slice the onion into strips. To mellow its sharpness and enhance crispness, soak the sliced onion in cold water for about 10 minutes. After soaking, drain thoroughly to remove excess water.

Wash the chives and cut them into approximately 5cm lengths. In a large bowl, combine the cut chives and the drained onion slices. Add all the dressing ingredients (5 Tbsp soy sauce, 2 Tbsp sugar, 3 Tbsp vinegar, 2 Tbsp gochugaru, 1 Tbsp minced garlic, 1 Tbsp sesame oil, 1 Tbsp toasted sesame seeds). Gently toss everything together to ensure the chives and onions are evenly coated with the dressing. Be careful not to overmix, as this can make the chives mushy.

Cut the smoked duck into bite-sized pieces. Heat a pan over medium heat and cook the duck until it’s golden brown and slightly crispy. Smoked duck usually contains enough fat, so you likely won’t need to add extra oil. You can periodically dab away excess rendered fat with a paper towel for a cleaner finish.

Arrange the golden-brown cooked smoked duck attractively on a serving plate. Generously pile the prepared chive salad next to it. This combination of chewy smoked duck and the sweet, sour, and slightly spicy chive salad creates a fulfilling and delicious meal or appetizer.
