Main Ingredients
- 1 pack Smoked Duck (approx. 200-300g)
- 80g Crab sticks (imitation crab meat)
- 1/4 Onion
- 1/3 Bell Pepper (1/3 each of red, orange, and yellow)
- 1 Bok Choy
- Rice paper wrappers
- Dipping Sauces (Fish sauce, peanut sauce, chili sauce, honey mustard, etc.)
Cooking Instructions
Step 1
First, peel and thoroughly wash the 1/4 onion. Slice it into very thin julienne strips. If you find raw onion too pungent, you can soak the slices in cold water for about 5 minutes before using them for a milder flavor.
Step 2
Since bell peppers are often eaten with their skin on, it’s important to wash them very well. Soak them in water with a little vinegar for about 5 minutes, then rinse thoroughly under running water. Washing them until they feel ‘crisp’ will give you peace of mind.
Step 3
Here’s a fun way to prepare bell peppers! Slice around the top of the bell pepper, just below the stem. Then, gently twist and pull to remove the top section along with the seeds. This makes seed removal much easier.
Step 4
Press the stem to remove it easily. If there are any remaining seeds or white pith inside the bell pepper, carefully scrape them out. Lightly rinse the prepared bell pepper under running water.
Step 5
Trim off the rounded end of the bell pepper, then cut it in half lengthwise for easier slicing.
Step 6
Place the cut side of the bell pepper down and slice it lengthwise into thin, uniform strips. This method ensures you get long, straight julienne cuts.
Step 7
Julienne the orange and yellow bell peppers using the same method described above. A colorful assortment of bell pepper strips looks incredibly appetizing.
Step 8
We’re using one head of bok choy from the refrigerator. Separate the leaves and roll them up tightly before thinly slicing. Slice the stems similarly. You can also use other vegetables like lettuce, perilla leaves, radish sprouts, or baby greens, depending on what you have on hand.
Step 9
Gently tear the crab sticks into bite-sized pieces. Tearing them rather than cutting keeps a better texture for chewing.
Step 10
Heat a dry skillet over medium-low heat and cook the smoked duck until it’s golden brown and slightly crispy. If there’s excessive fat, you can gently dab it with a paper towel. You can also use other proteins like bulgogi, shrimp, or chicken breast. Using smoked duck makes preparing Vietnamese spring rolls significantly easier and quicker.
