Smoked Duck & Tofu Wraps
A Special Smoked Duck & Tofu Wrap Dish Prepared for My Husband’s Birthday!
This is a wrap dish I specially prepared for my husband’s birthday last year. Using soft tofu wraps and perilla leaves, I combined them with smoked duck and various vegetables, and it became one of our most popular dishes! Let me introduce you to this simple yet visually appealing wrap recipe.
Ingredients- Tofu wraps 1 pack (approx. 300-400g)
- Smoked duck breast or thigh meat 1/2 pack (approx. 200-250g)
- Scallions or chives 1 bunch (approx. 50g)
- Fresh perilla leaves, as needed (approx. 10-15 leaves)
- Pickled radish wraps (Ssammu) 1 pack (approx. 20-30 sheets)
- Red bell pepper 1/2
- Yellow bell pepper 1/2
- Cucumber 1/2
- Red onion 1/2
- Green bell pepper 1/2
- Fresh bean sprouts 1 pack (approx. 50g)
Cooking Instructions
Step 1
First, lightly blanch the scallions in boiling water for about 30 seconds, then rinse them in cold water and drain well. This helps keep them crisp and makes them easier to tie the wraps. Pan-fry the smoked duck over medium-low heat until lightly browned and some of the fat has rendered. Julienne the bell peppers, cucumber, red onion, and green bell pepper into bite-sized strips suitable for wrapping. Wash the perilla leaves thoroughly and pat them completely dry. Excess moisture can cause the wraps to come apart.
Step 2
Now, let’s start assembling the wraps! I’ve prepared a few different ways to create them. One method uses the pickled radish wraps (ssammu). Start by placing a sheet of ssammu on your plate or cutting board.
Step 3
Next, layer one or two fresh perilla leaves on top of the ssammu. The fragrant aroma of the perilla leaves will enhance the flavor of the wrap.
Step 4
Arrange the cooked smoked duck, the colorful julienned vegetables, and a handful of crisp bean sprouts on top. Finally, use the blanched scallions to securely tie all the ingredients together, preventing them from falling out.
Step 5
Tying the wraps with scallions offers a different experience compared to using chives. Scallions provide a clean and refreshing element, while chives add a more robust aroma and texture. Feel free to choose your preference!
Step 6
Here’s another method using the tofu wraps. Place a sheet of ssammu, followed by a sheet of tofu wrap. Then, add the perilla leaves, followed by a generous portion of smoked duck and your prepared vegetables and bean sprouts. Again, tie it securely with a blanched scallion to complete the wrap.
Step 7
To accompany these delightful wraps, I’ve prepared a couple of dipping sauces. I mixed creamy peanut butter with zesty mustard for a smooth and flavorful sauce, and also included a spicy chili sauce for those who enjoy a bit of heat, offering a variety of taste experiences.
Step 8
The combination of tofu wrap and smoked duck was surprisingly delicious! Everyone was amazed by the presentation and the unique flavor. Since my husband enjoys wraps, I decided to make this special version with tofu wraps, and it was a huge hit. You can fill these tofu wraps with not only perilla leaves, vegetables, and smoked duck, but also with bulgogi, chicken, shrimp, or any other ingredient you fancy for a customized and tasty meal.
