A fantastic ‘fridge clean-out’ meal! I made a simple yet incredibly tasty Jjajang (black bean noodles) using smoked duck from my freezer. It’s surprisingly easy and wonderfully delicious, loved by both kids and adults. The rich flavor of the duck fat beautifully complements the savory black bean sauce, elevating the overall taste. This recipe is a winner for its convenience and delightful flavor!

Ingredients

  • Smoked duck 500g
  • 1 onion
  • 80g Jjajang powder (or solid Jjajang paste)

Cooking Instructions

Prepare your ingredients: Finely chop 1 onion. Cut the 500g of smoked duck into bite-sized pieces, similar in size to the chopped onion. Set aside the 80g of Jjajang powder to mix with water later. (You can also use solid Jjajang paste.)

Heat a non-stick pan over medium heat without adding any oil. Add the chopped smoked duck and stir-fry. The duck will release its own delicious fat as it cooks.

Once the duck is partially cooked and has released some fat, add the finely chopped onion to the pan. Continue to stir-fry until the onion becomes translucent and fragrant. If there’s an excessive amount of duck fat in the pan, you can carefully remove some of it with a paper towel to avoid a greasy texture. This helps maintain the duck’s flavor while keeping the dish balanced.

While the duck and onions are cooking, prepare the Jjajang sauce. For 80g of Jjajang powder, mix it with approximately 200-250ml of cold water until smooth and lump-free. (Refer to the package instructions for precise water amounts.) If using solid Jjajang paste, prepare it according to the product’s directions. Note that 80g is typically enough for about 4 servings.

pour the prepared Jjajang sauce into the pan.

Bring the sauce to a simmer and cook for about 2-3 minutes, stirring occasionally, until the sauce thickens and coats the duck and onions. If the sauce becomes too thick, add a little more water or broth to reach your desired consistency. Taste the sauce and if it’s slightly under-seasoned, you can add 2-3 tablespoons of sugar. This touch of sweetness balances the savory flavors, creating a wonderfully addictive ‘sweet and salty’ taste. Enjoy your delicious Smoked Duck Jjajang!
