Lately, I’ve found that steaming is the best cooking method, even better than grilling or stir-frying. So, I decided to take advantage of the vegetables I had in my fridge and made this delicious steamed dish with smoked duck. The savory duck combined with fresh vegetables creates a wonderful meal. It’s especially perfect for ensuring you get enough protein and vegetables, which are crucial as we get older. Feel free to use any vegetables you have on hand to make this easy and satisfying dish!
Main Ingredients- 200g Smoked Duck
- 1/2 Zucchini (or similar squash)
- 6 Korean Green Chili Peppers (Ggachi peppers)
- 1 handful of Garlic Chives
- 1 handful of Korean Angelica (Chwinamul) (or other leafy greens of your choice)
Special Sauce- 2 Tbsp Soy Sauce
- 2 Tbsp Mirin (or cooking wine)
- 1 Tbsp Persimmon Vinegar (or rice vinegar)
- 1 Tbsp Sesame Oil
- 1 tsp Toasted Sesame Seeds
- 2 Tbsp Soy Sauce

Cooking Instructions
Step 1
First, prepare the vegetables for steaming. Trim the stems off the Korean green chili peppers. Wash the garlic chives and Korean Angelica thoroughly and pat them dry. If you don’t have Korean Angelica, feel free to substitute with spinach, baby bok choy, bean sprouts, or any other leafy greens you enjoy.

Wash the zucchini and slice it into bite-sized pieces, about 1cm thick, into a half-moon shape. Slicing the vegetables evenly ensures they cook at the same rate.

Arrange the smoked duck and prepared vegetables attractively in your steamer basket. Spreading the duck slices out slightly will help them steam evenly and release their flavor into the vegetables.

Cover the steamer with a lid and steam over high heat for about 10-15 minutes. Steam until the vegetables are tender and the smoked duck has infused its flavor into them. The rendered duck fat will drip down and season the vegetables wonderfully.

While the vegetables and duck are steaming, let’s make the special sauce. In a small bowl, combine 2 tablespoons of soy sauce, 2 tablespoons of mirin, 1 tablespoon of persimmon vinegar, 1 tablespoon of sesame oil, and 1 teaspoon of toasted sesame seeds. Whisk everything together until well combined. This sauce offers a delightful balance of sweet, savory, and tangy flavors.

(Optional) For a more complete and satisfying meal, consider making a side of garlic chive egg drop soup. Its clear broth complements the steamed dish beautifully.
