German potato stir-fries are typically made by sautéing pre-boiled or steamed potatoes. They often incorporate German sausages, ham, or bacon for added flavor. This recipe utilizes leftover boiled potatoes, transforming them into a satisfying meal by stir-frying them with smoked duck.   • Boiled potatoes 3 (medium-sized)
  • Onion 1/2
  • Garlic cloves 5
  • Salt to taste

  • Olive oil 2 Tbsp
  • Chives (a handful, optional)
  • Parmesan cheese (grated)

Cooking Instructions

Step 1

First, prepare the potatoes for the stir-fry. Use potatoes that have been boiled or steamed until tender. You can test for doneness by easily inserting a fork or skewer into them.

While the boiled potatoes are still warm, peel them carefully. Then, slice them into flat pieces about 1cm thick. Avoid slicing them too thinly, as they might break apart during stir-frying.

Briefly blanch the smoked duck in boiling water for about 1 minute. This step helps to remove any gamey odor and render some of the fat, resulting in a cleaner taste. After blanching, rinse under cold water and drain thoroughly to remove excess moisture.

Slice the garlic thinly (or mince it) and slice the onion. Heat 1 Tbsp of olive oil in a pan over medium heat. Add the prepared smoked duck, minced garlic, and sliced onion. Season lightly with salt and pepper, and stir-fry until the duck is lightly browned and the onion becomes translucent.

Once the onions are translucent, add the sliced potatoes to the pan. Stir well to prevent sticking and season again with salt and pepper to your preference. Continue to stir-fry until the potatoes are lightly golden brown.

When the potatoes are somewhat golden, add the remaining 1 Tbsp of olive oil (or butter) to the pan. Stir everything together to ensure all ingredients are coated and continue to cook until well combined and heated through. This adds a lovely richness and helps coat the potatoes.

Turn off the heat. Add finely chopped chives (if using) and quickly toss them through the stir-fry. Chives are best when slightly wilted to retain their crispness and fresh aroma. Chives are an optional ingredient for added flavor, so feel free to adjust or omit them based on your preference.
