Ingredients- 1 Kabocha squash
- 1 pack (approx. 200-300g) Smoked duck breast
- 10-15 whole garlic cloves
- 1 Onion
- 1 Tbsp Oyster sauce
- Sliced cheese, to taste (2-3 slices)
- Shredded mozzarella or pizza cheese, to taste (approx. 1/2 cup)
Cooking Instructions
Step 1
Thoroughly wash the kabocha squash, keeping the skin on, by scrubbing it with baking soda. Place the washed squash in the microwave and cook for about 5-7 minutes until it starts to soften. This step makes it easier to cut and scoop out the seeds later.
Step 2
Carefully cut off the top of the softened squash to create a lid. Use a spoon to scoop out all the seeds and stringy bits from the inside. Place the hollowed-out squash onto a baking sheet and bake in a preheated oven at 180°C (350°F) for about 10 minutes. This helps to dry out the inside slightly, making it firmer for filling. (For mini kabocha squash, you can skip this pre-baking step.)
Step 3
Peel the onion, cut it in half, and then slice it thinly into half-moons. Prepare the whole garlic cloves by peeling them, or leave them unpeeled if you prefer a milder flavor.
Step 4
In a heated pan, add the smoked duck breast (cut into bite-sized pieces), sliced onion, and whole garlic cloves. Stir-fry everything together. The smoked duck releases its own fat, so you likely won’t need to add extra oil.
Step 5
Once the smoked duck and vegetables are partially cooked, add 1 tablespoon of oyster sauce. Stir well to coat all the ingredients and cook for another 1-2 minutes to deepen the flavors.
Step 6
Transfer the cooked smoked duck mixture to a sieve placed over a bowl. Allow any excess oil to drain off completely. This ensures the final dish is less greasy and more enjoyable.
Step 7
Carefully spoon the drained smoked duck mixture into the hollowed-out kabocha squash. Once filled, place the squash back into the preheated oven at 180°C (350°F) and bake for about 15 minutes. (If using mini kabocha squash, bake for approximately 10 minutes, being careful not to overcook.)
Step 8
Remove the baked squash from the oven. Let it cool slightly on a wire rack or cutting board. Then, carefully cut the squash into 6 wedges (or your desired serving size). You can cut through the skin or remove it before slicing.
Step 9
Arrange the sliced squash pieces on a serving platter. Top each piece generously with slices of cheese, followed by a good amount of shredded mozzarella or pizza cheese. For an extra touch, sprinkle with dried parsley.
Step 10
Return the cheese-topped squash to the oven or microwave. Bake for about 5 minutes, or until the cheese is fully melted and golden brown. In the oven, 180°C (350°F) for 5 minutes is usually sufficient. If using a microwave, heat on a medium setting until the cheese is melted.
Step 11
Your beautifully baked Smoked Duck and Kabocha Squash Bake with Cheese is ready to be enjoyed! Savor the delightful combination of sweet squash, savory duck, and melted cheese.
