Essential Ingredients- 1 Kabocha squash
- 500g Smoked duck breast
- 10 cloves Garlic
- 1 pouch Mozzarella cheese
- 3 Tbsp Oyster sauce
- 2 Tbsp Oligodang (corn syrup)
- Pinch of black pepper
Cooking Instructions
Step 1
First, wash the kabocha squash thoroughly. Place it in a microwave-safe dish and microwave for 5 minutes. This will partially cook the squash, making it easier to cut.
Step 2
Carefully remove the top part of the softened kabocha squash. Using a spoon, scoop out the seeds and inner pulp until the inside is clean, creating a squash bowl. Be careful not to scoop too deeply.
Step 3
Place the prepared smoked duck and whole garlic cloves evenly in the air fryer basket. Cook at 180°C (350°F) for 10 minutes. This step helps to render out some of the duck’s fat.
Step 4
Remove the duck and garlic from the air fryer. Transfer them to a bowl. Add 3 tablespoons of oyster sauce and a pinch of black pepper. Mix well until the duck is evenly coated with the sauce. Note that smoked duck is often pre-seasoned, so you might adjust the oyster sauce amount to your preference.
Step 5
Brush the inside of the hollowed-out kabocha squash with 2 tablespoons of oligodang. This adds a touch of sweetness and a nice glaze. Generously stuff the seasoned smoked duck mixture into the kabocha squash cavity. Place the stuffed squash back into the air fryer basket and bake at 180°C (350°F) for another 10 minutes.
Step 6
Finally, generously sprinkle the entire top of the stuffed squash with 1 pouch of mozzarella cheese. Return it to the air fryer and cook at 180°C (350°F) for 5 minutes, or until the cheese is melted, bubbly, and golden brown. Your delicious Smoked Duck and Kabocha Squash Bake is ready to serve!
