Cooking Instructions
Step 1
Heat a frying pan and gently pan-fry the smoked duck slices until lightly golden. The duck may release some oil, so carefully dab away any excess oil with paper towels. This step helps to render some fat, making the duck less greasy while preserving its savory flavor.
Step 2
Prepare the vegetables for wrapping. Slice the bell pepper into thin, long strips. Wash the perilla leaves, pat them dry, and cut them into quarters. Trim the roots of the shiso sprouts to ensure they are fresh. If your pickled radish wraps feel very moist, drain them well by placing them in a colander. Excess moisture can cause the wraps to unravel.
Step 3
Now, let’s assemble the wraps. Lay one pickled radish wrap flat as the base. Arrange a quartered perilla leaf on top. Then, artfully place the sliced bell pepper, a bundle of shiso sprouts, and the pan-fried smoked duck slices onto the perilla leaf.
Step 4
Carefully roll the ingredients up tightly within the pickled radish wrap to prevent them from falling out. Be gentle to avoid tearing the wrap; aim for a firm yet delicate roll.
Step 5
Arrange the rolled wraps in a circular pattern around the edge of a serving plate, creating an attractive presentation. Place a small dipping bowl in the center and fill it with your chosen sauces. For an extra delicious touch, try mixing the Vietnamese spring roll sauce and peanut sauce together in a 1:1 ratio for a wonderfully creamy and nutty flavor!
