  • 2 eggplants
  • 60g smoked duck breast
  • 1/2 red bell pepper
  • 1/2 carrot
  • 5 Korean green chilies (or 1/2 green bell pepper)
  • Salt to taste
  • 1 Tbsp olive oil
  • Mustard sauce, for serving (optional)

Cooking Instructions

Step 1

Wash the eggplants thoroughly. Using a vegetable peeler or mandoline, carefully slice the eggplants lengthwise into long, thin strips. Place the eggplant slices in a bowl and sprinkle with a little salt. Let them sit for about 5 minutes to draw out moisture. This step helps soften the eggplant and makes it easier to roll without breaking.

Step 2

Heat 1 tablespoon of olive oil in a frying pan over medium heat. Add the salted eggplant slices and lightly pan-fry them until they are tender and slightly golden brown on both sides. Be careful not to overcook; they should still have a slight bite. Remove the cooked eggplant from the pan and place them on paper towels to absorb any excess oil.

Step 3

Prepare the vegetables: wash and julienne the bell pepper, carrot, and Korean green chilies (or green bell pepper) into thin strips of similar length to the eggplant slices. Slice the smoked duck breast into bite-sized pieces. Briefly heat the smoked duck in the microwave for about 30 seconds to 1 minute, or quickly sauté it in a pan until warm. Gently press the warm duck with paper towels to remove any excess grease.

Step 4

Arrange two slices of the cooked eggplant on a clean surface, slightly overlapping them. Place a portion of the julienned vegetables and smoked duck along one edge of the overlapped eggplant. Carefully roll the eggplant up tightly, like making a sushi roll. Once rolled, you can slice the eggplant rolls into bite-sized pieces for serving. Arrange them on a platter and serve with mustard sauce on the side, if desired.
