Main Ingredients
- 400g Smoked Duck
- 100g Fresh Chives
- 1/4 Onion (small size)
Spicy & Sweet Dressing
- 3 Tbsp Soy Sauce
- 3 Tbsp Gochugaru (Korean chili flakes)
- 2/3 Tbsp Sugar
- 2/3 Tbsp Minced Garlic
- 1 and 1/2 Tbsp Vinegar
- 1 Tbsp Sesame Oil
- 1 Tbsp Toasted Sesame Seeds
- 3 Tbsp Soy Sauce
- 3 Tbsp Gochugaru (Korean chili flakes)
- 2/3 Tbsp Sugar
- 2/3 Tbsp Minced Garlic
- 1 and 1/2 Tbsp Vinegar
- 1 Tbsp Sesame Oil
- 1 Tbsp Toasted Sesame Seeds
Cooking Instructions
Step 1
First, thinly slice 1/4 of an onion into strips. You can use them as is, or for a milder flavor, soak them in cold water for a few minutes and then drain thoroughly.
Step 2
Wash the fresh chives thoroughly under running water, ensuring all dirt and debris are removed. Cut them into bite-sized pieces, about 3-4 cm long.
Step 3
Now, let’s make the delicious dressing! In a bowl, combine 3 Tbsp soy sauce, 3 Tbsp gochugaru, 2/3 Tbsp sugar, 2/3 Tbsp minced garlic, 1 and 1/2 Tbsp vinegar, 1 Tbsp sesame oil, and 1 Tbsp toasted sesame seeds. Stir well until the sugar is dissolved.
Step 4
Place the smoked duck in a non-stick pan over medium heat and cook for 2-3 minutes until lightly browned. The duck will release its own oil, so no additional oil is needed. Alternatively, you can use an air fryer preheated to 180°C (350°F) for about 5 minutes for a crispier texture.
Step 5
In a large bowl, combine the sliced onions and cut chives. Pour the prepared dressing over them and gently toss with your hands to ensure everything is evenly coated. Be careful not to mash the chives when mixing.
Step 6
Serve the warm, slightly crisp smoked duck alongside the fresh, spicy, and tangy chive salad. The combination is wonderfully balanced, cutting through any richness of the duck and enhancing your appetite. It’s a simple yet impressive dish perfect for a meal or as a side with drinks!
