I had some smoked duck and wasn’t sure what to make with it. So, after work, I decided to whip up this quick and easy rice bowl. Adding creamy avocado makes it incredibly delicious! It’s a wonderfully satisfying and healthy meal.

Ingredients
  • 200g Smoked Duck Breast
  • A handful of fresh Scallion Greens, thinly sliced
  • 1 cup Shredded Cabbage
  • 2 Large Eggs
  • 1 Ripe Avocado

Sauce & Seasoning
  • 1 Tbsp Soy Sauce
  • 1 Tbsp Sesame Oil
  • A pinch of Black Pepper

Cooking Instructions

Step 1

Start by preparing the smoked duck. Personally, I prefer the ‘Golden Roast Duck’ brand for its tenderness and rich flavor. (I used to buy it at E-mart, but it’s hard to find these days; I recently found it at Hyundai Department Store Food Hall!) You can use your favorite brand of smoked duck.

Step 2

Finely shred the cabbage and lightly sauté it in a pan with a little oil until it’s still crisp. Be careful not to overcook it, so it doesn’t become mushy.

Step 3

Gently stir-fry the thinly sliced scallion greens for just a moment. This mellows their sharp flavor and adds a subtle aroma. Avoid cooking them for too long, as they can become bitter.

Step 4

Cut the ripe avocado into bite-sized pieces. Its creamy texture will wonderfully complement the other ingredients in the bowl.

Step 5

Place the smoked duck in a pan over medium heat and cook until lightly browned on both sides. You don’t need to add extra oil, as the duck will render its own flavorful fat.

Step 6

Assemble your rice bowl! Place a generous serving of steamed rice in a bowl. Top it with the sautéed cabbage, stir-fried scallions, browned smoked duck, and sliced avocado. Fry the eggs to your liking (sunny-side up or over easy works well) and place them on top. Drizzle with soy sauce and sesame oil. Finish with a sprinkle of black pepper over the avocado. You can also add toasted sesame seeds if you like. Mix everything together and enjoy your delicious and wholesome meal!
