Ingredients

  • Smoked duck breast or thigh 200g
  • Aged kimchi (fermented napa cabbage) 300g
  • Onion 160g
  • Garlic 50g (can be whole or sliced)

Seasoning

  • Corn syrup or oligosaccharide 2 Tbsp
  • Chopped green onion 3 Tbsp
  • Sesame seeds 2 Tbsp
  • Perilla oil 2 Tbsp

Cooking Instructions

Step 1

Prepare the smoked duck and aged kimchi for this delicious stir-fry.

I’m using smoked duck thigh meat, but breast meat works wonderfully too. Feel free to choose your preference.

Slice the onion into approximately 1cm thick pieces.

If your aged kimchi is very sour, rinse it under running water 2-3 times to mellow the tartness. Squeeze out excess water thoroughly, then cut it into roughly 3cm pieces.

Heat a large wok or frying pan over medium heat without adding any oil. Add the smoked duck and garlic, and stir-fry until golden brown and rendered. Transfer the cooked duck to a plate lined with paper towels to absorb excess fat.

You should have about one tablespoon of duck fat remaining in the pan. We’ll use this flavorful fat to sauté the kimchi. No need to add extra oil!

Add the cut aged kimchi and perilla oil to the pan with the rendered duck fat. Stir-fry over medium heat for about 3 minutes until the kimchi softens. Next, add the sliced onion and cook until it becomes translucent. Stir in the corn syrup (or oligosaccharide), chopped green onion, and sesame seeds. Mix everything well for about 30 seconds, then turn off the heat. The kimchi is already seasoned, so no additional salt is usually needed.

and stir everything together briefly until well combined. Your delicious smoked duck and aged kimchi stir-fry is ready!
