Cooking Instructions
Step 1
First, let’s prepare the pork ribs. Rinse them under cold running water to remove any surface impurities and trim off excess fat. To help the marinade penetrate deeply, make shallow cuts into the thicker parts of the ribs with a knife.
Step 2
An essential step for tenderizing the ribs and removing any gamey odor is soaking them to remove blood. Soak the ribs in cold water for at least 1 hour for fresh ribs, or 3 hours for frozen ribs. Change the water periodically to ensure all blood is leached out. While it takes a little time, this step is crucial for a delicious outcome.
Step 3
After soaking, parboil the ribs in rice water (or regular water) for about 5 to 10 minutes. This process helps to further remove impurities and tenderize the meat. Once parboiled, rinse the ribs again under running water to remove any scum.
Step 4
Now, let’s make the flavorful marinade! If you don’t have a pear, you can increase the amount of apple and onion. If neither pear nor apple is available, use one whole onion. Combine the pear, apple, onion, garlic, and radish in a blender. You can adjust the soy sauce and water later based on the desired consistency.
Step 5
Transfer the blended fruit and vegetable mixture to a bowl. Add the mirin, soy sauce, plum extract, honey, sesame oil, and 150 ml of water. Stir everything together thoroughly until well combined to create the marinade.
Step 6
Place the prepared pork ribs in a large bowl. Pour the marinade over the ribs. You don’t need to marinate them for a long time; simply mix them well to ensure they are evenly coated with the sauce.
Step 7
Time to start cooking! Place the marinated ribs in a pot over high heat and bring to a boil. Once boiling, reduce the heat to medium and simmer for 10 minutes. Then, lower the heat to low and continue to simmer for another 20 minutes. This initial cooking stage helps to tenderize the meat and start reducing the sauce.
Step 8
While the ribs are cooking, prepare the vegetables. Trim the edges of the potatoes and carrots into rounded shapes. This helps prevent them from breaking apart too much during cooking. However, if you prefer a thicker, richer sauce, some vegetables breaking down is fine, so feel free to skip this step if you’re short on time.
Step 9
Add the prepared potatoes, carrots, onion, green onion, and dried chili to the pot with the ribs. Increase the heat to medium and simmer for about 10 more minutes. Remember to stir occasionally to prevent the sauce from sticking to the bottom of the pot.
Step 10
For the final cooking stage: If using a pressure cooker, close the lid at this point. Once the whistle blows, reduce the heat to low and cook for about 1 hour. If using a regular pot, reduce the heat to very low and let it simmer gently until the sauce thickens and all ingredients are tender, which may take around 1 hour and 30 minutes. Cooking times can vary depending on your stove and pot, so keep an eye on the consistency of the sauce and the tenderness of the meat.
Step 11
Your delicious Pork Rib Stew is ready! Serve hot with a side of steamed rice for a satisfying meal.
