This recipe is perfect for anyone trying to eat healthier or lose weight. It’s incredibly easy to make and incredibly delicious!
Ingredients
- 1/2 medium zucchini, julienned
- 3 large eggs
- 1 Cheongyang pepper (optional, for a spicy kick)
- 3 pinches of salt (approx. 1/4 tsp)
- Cooking oil (or olive oil) for frying, generous amount
Cooking Instructions
Step 1
First, wash the zucchini thoroughly and trim off the ends. Julienne it into very thin strips, about 0.3 cm thick. Cutting it thinly is key for even cooking and a pleasant texture.
Step 2
If using Cheongyang pepper, remove the seeds and mince it very finely. You can skip this if you prefer a milder flavor or are serving to children.
Step 3
In a bowl, crack the 3 eggs and add the 3 pinches of salt. Whisk the eggs thoroughly until well combined. You can adjust the salt to your preference.
Step 4
Add the julienned zucchini and minced pepper to the egg mixture. Gently mix everything together with a spoon or spatula, ensuring the zucchini is evenly coated with the egg batter.
Step 5
Heat a frying pan over medium-low heat and add a generous amount of cooking oil. Ladle portions of the batter into the pan, forming round pancakes. Cook for about 4-5 minutes until the bottom is golden brown and set. Keep an eye on the heat to prevent burning.
Step 6
Once the bottom is nicely browned, carefully flip the pancakes. Cook the other side for another 3 minutes, or until golden brown and cooked through. Ensure both sides are evenly cooked before serving.
