Main Ingredients- Noodles (Somen or Chujian) 100g
- 1 medium Zucchini
- 1/2 stalk Green Onion
Cooking Instructions
Step 1
First, wash the zucchini, remove the seeds, and julienne it thinly. Finely chop the green onion. Prepping the vegetables like this will help shorten your cooking time.
Step 2
Heat a frying pan over medium heat and add a little cooking oil. Add the julienned zucchini and chopped green onion, along with salt and gochugaru, and stir-fry. Start by stir-frying quickly over high heat to maintain the crispness of the vegetables, then reduce the heat to medium-low and cook until the zucchini softens. It’s important to stir occasionally to prevent burning.
Step 3
Once the zucchini is tender, turn off the heat, add sesame oil and toasted sesame seeds, and mix gently to finish. The savory aroma of sesame oil and seeds will make it even more delicious.
Step 4
Bring a pot of generously salted water to a rolling boil over high heat. Once boiling, add the noodles and cook according to the package directions. When the noodles are cooked, drain them and rinse thoroughly under cold water to remove excess starch. Drain well in a colander so the noodles don’t stick together. Rinsing under cold water removes starch and gives the noodles a firm, chewy texture.
Step 5
Arrange the cooked noodles in a serving bowl. Top generously with the warm, stir-fried zucchini mixture you just prepared. Finally, sprinkle with more toasted sesame seeds for extra nutty flavor. Your delicious zucchini noodles are ready! Mix well and enjoy!
