Super Easy Zucchini Leaf Wraps!

I’ve made zucchini leaf wraps, a must-have among my favorite ssam밥 (rice wrapped in leaves). Even beginners can easily make these without steaming, and I’ll show you how to wash them easily. Enjoy the fresh, slightly sweet flavor of zucchini leaves!

Ingredients
  • 200-300g Zucchini leaves
  • 1 tsp Salt
  • 1 Tbsp Vinegar

Cooking Instructions

Step 1

Prepare the zucchini leaves. If you bought them from a market, they are usually fresher and tastier.

Step 2

If there are tough fibers on the stems of the zucchini leaves, carefully scrape them off with a knife or peel them. Zucchini leaves bought from supermarkets are often pre-trimmed, but if you find any tough parts, be sure to remove them thoroughly so you can enjoy them tenderly.

Step 3

Arrange the carefully trimmed zucchini leaves in a large bowl, making sure they don’t overlap too much. Pour enough water to generously cover the leaves. Then, sprinkle 1 tablespoon of vinegar over the top of the water. The vinegar helps to remove any grassy smell and makes the leaves even more tender.

Step 4

Gently press down on the zucchini leaves with a small plate or a weight so they stay submerged in the water. Let them sit like this for about 5 minutes to soften. After 5 minutes, rinse the leaves one by one under running water to remove any dirt or debris.

Step 5

Bring a pot of water to a rolling boil, then add 1 teaspoon of salt. Carefully add the rinsed zucchini leaves to the boiling water and blanch for just about 1 minute. Be careful not to overcook them, as they can become mushy. Blanching for a short time is the secret to maintaining their crisp texture.

Step 6

Immediately transfer the blanched zucchini leaves to a bowl of cold water and gently swirl them around for about two rinses. Rinsing in cold water helps them cool down quickly, retaining their crispness and freshness. After rinsing, gently squeeze out as much water as possible by hand. This prevents the wraps from becoming watery when served with rice.

Step 7

Carefully untangle any clumped leaves that were squeezed. Gently spread them out one by one. Once prepared like this, your delicious zucchini leaf wraps are ready! Serve them with warm rice and your favorite ssamjang (dipping sauce) for a wonderful meal.
