Main Ingredients- Vermicelli noodles 80g (thin and translucent)
- 1 large egg
- 30ml milk (for added tenderness)
- 50g cabbage (chopped into bite-sized pieces)
- A handful of chives (cut into manageable lengths)
- A small bunch of scallions (finely chopped)
Soy Sauce Dressing- 1 tsp soy sauce (approx. 5ml)
- 1 tsp oyster sauce (approx. 5ml)
- 1/2 tsp minced garlic (approx. 2-3g)
- 1 tsp soy sauce (approx. 5ml)
- 1 tsp oyster sauce (approx. 5ml)
- 1/2 tsp minced garlic (approx. 2-3g)
Cooking Instructions
Step 1
First, prepare all the ingredients for the dish. Importantly, soak the vermicelli noodles in cold water for at least 10 minutes before cooking. This ensures the noodles become soft and chewy. After soaking, drain them well in a colander.

While the vermicelli is soaking, prepare the delicious soy sauce dressing. In a small bowl, combine 1 tsp soy sauce, 1 tsp oyster sauce, and 1/2 tsp minced garlic. Stir well until all ingredients are evenly mixed. Preparing the sauce in advance saves time during cooking.

To make the scrambled eggs extra tender, crack 1 large egg into a bowl and add 30ml of milk. Whisk thoroughly with a fork or whisk until the egg white and yolk are well combined.

Now, let’s start stir-frying. Heat a pan over low heat and add a generous amount of cooking oil. Pour the prepared egg mixture into the pan in a circular motion. You want it to cook into soft curds, not a thin omelet.

Finally, add the fresh chives. Chives cook very quickly, so add them at the very end and stir-fry just until they wilt slightly. This preserves their fresh aroma and crisp texture. Be careful not to overcook them, as they can become mushy.
