Essential Ingredients- 3 sheets of Gim (seaweed)
- Cooked Rice (warm)
- A little aged Kimchi
- A little pickled radish (Danmuji)
- A little cucumber
- A little Crown Daisy (Ssukgat)
- A little Perilla leaves (Kkaenip)
Cooking Instructions
Step 1
In the warm cooked rice, mix in the sesame oil, toasted sesame seeds, and a pinch of sea salt, adjusting the salt to your taste. Gently combine the ingredients, being careful not to mash the rice grains.
Step 2
Place a sheet of Gim on a bamboo rolling mat, shiny side down. Spread the seasoned rice thinly over the Gim, leaving about a 1cm border at the top. Arrange your fillings: pickled radish, cucumber slices, and Crown Daisy. Feel free to use any other vegetables you have on hand, like carrots or spinach! Generous amounts of vegetables make this gimbap healthy and refreshingly light.
Step 3
Layer a perilla leaf on top of the vegetables. Then, place the aged kimchi, squeezed of excess liquid and finely chopped, onto the perilla leaf. The kimchi’s spicy and tangy flavor will add a wonderful depth to the gimbap.
Step 4
Using the bamboo mat, tightly roll the Gim from the bottom upwards, tucking the filling in securely. Continue rolling until you reach the top border. Gently press to shape. Your simple, customized vegetable gimbap is now ready!
Step 5
Slice the rolled gimbap into bite-sized pieces, about 1.5 to 2cm thick. To ensure clean cuts, lightly dampen your knife with water or wipe it with a damp paper towel between slices to prevent the rice from sticking.
