Main Ingredients- 100g somyeon or jungmyeon noodles
- 1 can (150g) canned vegetable tuna
- 1/2 cup thinly sliced well-fermented kimchi
Cooking Instructions
Step 1
First, prepare one can (150g) of canned vegetable tuna. Open the can, place it over a sieve, and drain as much oil as possible. Place the drained tuna solids into a clean bowl.
Step 2
Next, add 1/2 cup of finely julienned aged kimchi or well-fermented kimchi to the tuna. The tanginess of the kimchi will create a richer flavor when combined with the tuna.
Step 3
Now, let’s make the delicious bibim guksu sauce. Add 2 tablespoons of store-bought cho-gochujang, 1/2 tablespoon of sugar, 1 tablespoon of sesame oil, and 1 tablespoon of toasted sesame seeds to the tuna and kimchi mixture. Mix everything thoroughly until well combined.
Step 4
In a large pot, bring plenty of water to a rolling boil. Once the water is boiling, add 100g of somyeon or jungmyeon noodles. It’s important to stir the noodles with chopsticks as they cook to prevent them from sticking to the bottom of the pot.
Step 5
When the noodles start to swell and the water begins to boil vigorously, pour in about 1/2 cup of cold water to lower the temperature of the boiling water. Repeat this process of adding cold water and bringing it back to a boil 2-3 times. This technique will make the noodles chewier and more firm. Finally, drain the cooked noodles in a sieve and rinse them under cold running water, rubbing gently to remove excess starch. Drain them thoroughly.
Step 6
This is the final step! Add the drained chewy noodles to the prepared tuna and kimchi sauce. Mix everything together by hand, gently squeezing and tossing, until all ingredients are well combined. Your delicious tuna kimchi bibim guksu is now ready! For an extra touch, you can garnish with sliced cucumbers or a thinly sliced cooked egg.
