During such times, I personally love to rely on recipes that can be made using the microwave. Today, I’m excited to share a ‘Tomato Seafood Risotto’ that you can whip up in a flash with just your microwave, no stove required! It’s a wonderfully convenient way to enjoy a satisfying meal without breaking a sweat.

First, place the handful of frozen seafood mix into a microwave-safe bowl. Microwave it for about 2 minutes and 30 seconds to partially cook it. This initial cooking step helps to reduce any fishy odors and ensures the seafood is more tender.

Carefully remove the partially cooked seafood from the microwave. You’ll likely find some water has accumulated from the frozen seafood. Drain this liquid thoroughly using a sieve. This step is crucial for a cleaner-tasting risotto.

Now, prepare a deep, microwave-safe dish. Add the semi-cooked seafood, the bowl of cooked rice, and the finely chopped onion to the dish. Adding onion not only balances the richness but also provides a delightful crisp texture that enhances the overall dish.
