We all know tomatoes are good for us, but perhaps we don’t use them in cooking as much as we could. This tomato and egg stir-fry requires minimal ingredients and cooks up in a flash, making it a satisfying meal on its own. It’s especially perfect for a quick and healthy breakfast on busy mornings. Main Ingredients- 5 Eggs
- 320g Tomatoes (about 2 medium)
- 1 Small Scallion (white part mostly)
Seasoning & Others- 1 Tbsp Soy Sauce (preferably seasoned)
- 1 Tbsp Oyster Sauce
- 0.5 tsp Salt
- 0.5 tsp Black Pepper
- Vegetable Oil (for stir-frying)

Cooking Instructions
Step 1
The ingredients for this dish are wonderfully simple! Feel free to use any type of tomato you have on hand.
Step 2
First, chop the tomatoes into bite-sized pieces, about 2-3 cm each. Slice the scallion as desired – thinly on an angle or finely chopped works well.
Step 3
In a bowl, crack the 5 eggs and whisk them with 0.5 tsp of salt until well combined. Adding salt to the eggs beforehand helps make them fluffier.
Step 4
Heat a non-stick pan over medium heat and add a generous amount of vegetable oil. Pour in the whisked eggs. Once the bottom begins to set, gently stir and scramble the eggs to create large, fluffy curds. Avoid breaking them up too much for a better texture.
Step 5
Once the scrambled eggs are cooked, remove them from the pan and set aside on a plate. Cooking the eggs separately first helps prevent them from breaking apart when mixed with the tomatoes later.
Step 6
In the same pan, add a little more oil if needed, and sauté the sliced scallions until they become fragrant and slightly softened. Then, add the chopped tomatoes. Pour in 1 Tbsp of soy sauce, 1 Tbsp of oyster sauce, and 0.5 tsp of black pepper. Continue to stir-fry, ensuring not to burn the ingredients.
Step 7
If you don’t have seasoned soy sauce (맛간장), regular soy sauce is a perfectly fine substitute. For an extra layer of umami flavor, using oyster sauce is highly recommended!
Step 8
By this point, the tomatoes should be softening and nicely coated in the sauce. Add the pre-cooked scrambled eggs back into the pan. Gently toss everything together and stir-fry for about another minute until well combined. Your delicious tomato and egg stir-fry is now ready!
Step 9
A drizzle of sesame oil at the end can enhance the aroma, but it’s entirely optional and won’t affect the taste significantly. Enjoy it immediately while it’s warm for the best flavor.
