Main Ingredients- 2 large eggs
- 30ml milk (approx. 2 Tbsp)
- 7 cherry tomatoes
- 2 pinches of salt (use sea salt or Korean bamboo salt for extra flavor!)
- 1 pinch of sugar
- A little black pepper (freshly ground is best for aroma)
Cooking Instructions
Step 1
Preparation is a breeze with these simple ingredients! You only need fresh cherry tomatoes, eggs, and basic seasonings to create this delightful dish. It’s almost like magic! (Tip: Using Korean bamboo salt can add a deeper, savory flavor.)
Step 2
Crack 2 large eggs into a bowl. Add 30ml of milk, 2 pinches of salt, and 1 pinch of sugar. Whisk everything together with a fork or whisk until the eggs are well beaten. Wash the cherry tomatoes thoroughly, remove the stems, and cut them in half for bite-sized pieces.
Step 3
Heat about 1/2 Tbsp of butter (or cooking oil) in a non-stick skillet over medium heat. Once the butter is melted and fragrant, carefully pour in the beaten egg mixture. As the edges begin to set, gently stir with chopsticks or a spatula to create soft scrambled eggs.
Step 4
When the scrambled eggs are about 70% cooked, gently stir them to form soft curds. Be careful not to overcook, as this can make them dry!
Step 5
Now, add the halved cherry tomatoes to the skillet with the scrambled eggs. Stir everything together gently and cook for about 1 minute, or until the tomatoes are slightly softened. The sweet and tangy flavor of the tomatoes will beautifully complement the eggs.
Step 6
Finally, season with freshly ground black pepper for an extra burst of aroma. Your delicious tomato and egg stir-fry is ready! Serve it warm with rice or toast for a wonderful meal.
