Main Ingredients

  • 1 pack ground pork (approx. 200g)
  • 2 handfuls mung bean sprouts (approx. 100g)
  • 1 handful chives (approx. 50g)
  • 1/2 block firm tofu (approx. 150g)
  • 1 handful oyster mushrooms (approx. 50g)
  • 1 egg
  • Pancake mix (as needed, to adjust batter consistency)

Seasoning

  • Salt to taste
  • Pinch of black pepper
  • Olive oil or cooking oil (for frying)

Cooking Instructions

Step 1

First, it’s crucial to remove as much moisture from the tofu as possible. Press the tofu with paper towels to drain excess water, then mash it thoroughly with your hands until it’s smooth and lump-free. Transfer the mashed tofu to a large bowl.

To the bowl with the mashed tofu, add the thoroughly washed and chopped mung bean sprouts, chives, ground pork, and oyster mushrooms (torn or chopped into bite-sized pieces). Crack in 1 egg, add a pinch of black pepper, and season with salt. Now, add the pancake mix. The amount needed will depend on the moisture content, but aim for a batter that is not too runny; it should be slightly thick. If it’s too watery, the pancakes might break apart during cooking, so add pancake mix gradually until you achieve the right consistency.

Put on a pair of disposable gloves and mix all the ingredients in the bowl thoroughly with your hands. Knead and combine everything until well incorporated. Ensuring all ingredients are evenly distributed and seasoned is key for great flavor.

Heat a generous amount of olive oil or cooking oil in a frying pan over low heat. Form the batter into your desired size (usually about 10cm in diameter) and place it in the heated pan. Cook slowly over low heat. It’s important to maintain low heat to ensure the inside cooks through without burning the exterior.
