  • Kimchi 100g (well-fermented)

Seasoning & Garnish

  • Sugar 1 tsp
  • Sesame oil 1 tsp
  • Toasted sesame seeds, a pinch
  • Parsley flakes, a pinch (optional)

Cooking Instructions

Cut the 200g of tofu into bite-sized pieces (about 2-3cm squares). You can lightly blanch it in boiling water for a softer texture, or use it directly.

Drain the cut tofu on a sieve or gently pat it dry with paper towels. This helps the tofu maintain a firmer texture.

Chop the 100g of kimchi finely. Removing some of the excess kimchi juice before chopping can enhance the flavor when stir-frying.

Heat a pan over medium-low heat. Add the chopped kimchi and stir-fry for about 2 minutes. The goal is to reduce its crispness and bring out its sweetness.

Once the kimchi is slightly softened, add 1 tsp of sugar and stir well to combine. The sugar helps to balance the sourness of the kimchi and adds a pleasant depth of flavor.

Push the stir-fried kimchi to one side of the pan or turn off the heat. Drizzle 1 tsp of sesame oil over the kimchi. Adding sesame oil off the heat helps preserve its aroma.
