Ingredients
  • Almond flour, 80g
  • 1 Egg
  • 1 medium Sweet potato, cooked and mashed
  • Unsalted butter, 10g
  • Allulose, 1 tsp (optional)
  • Vanilla powder, 0.5 tsp

Cooking Instructions

Step 1

First, melt the unsalted butter (10g) by microwaving it for 10 seconds. If it’s not fully melted, microwave for another 10 seconds until completely liquid.

Step 2

In a bowl, combine the almond flour (80g) and the melted butter. Gently mix them together until incorporated.

Step 3

Add the egg and vanilla powder (0.5 tsp) to the bowl. Whisk everything together thoroughly until you have a smooth, cohesive batter.

Step 4

Now, add the mashed sweet potato (1 medium-sized) to the batter and mix again until well combined. For this recipe, it’s best to use a sweet potato variety like a Japanese sweet potato that has a good balance of moisture, as we’re not using a lot of butter. This will help achieve the right dough consistency!

Step 5

The natural sweetness from the sweet potato is often enough, but if you prefer a sweeter cookie, add 1 tsp of allulose. You can skip this step if you’re happy with the sweetness of the sweet potato alone.

Step 6

Take spoonfuls of the finished dough and gently flatten them with your palm to form cookie shapes. Rolling them into balls first and then pressing them down works well. If you have cookie cutters, feel free to use them for decorative shapes!

Step 7

Arrange the shaped cookie dough on your air fryer basket. Bake at 190°C (375°F) for a total of 12 minutes. About halfway through, at the 7-minute mark, carefully flip the cookies over and bake for another 5 minutes to ensure they are golden brown on both sides. (Cooking times and temperatures may vary slightly depending on your air fryer model, so adjust as needed.)
