  • 2.5 Tbsp sugar
  • 3.5 Tbsp corn syrup (or other liquid sweetener like honey)

First, gather all the ingredients you’ll need to make the sweet potato candies. Wash the sweet potatoes thoroughly.

In a pot or frying pan, combine the sugar (2.5 Tbsp) and corn syrup (3.5 Tbsp) for the candied syrup. Place it over low heat and stir gently until the sugar dissolves. Be careful not to let the sugar burn, and adjust the sweetness and consistency to your liking.

While the syrup is being prepared, cut the washed sweet potatoes into bite-sized cubes. Aim for pieces about 2-3 cm (about 1 inch) in size; too large and they’ll take longer to cook, too small and they might break apart.

Place the cubed sweet potatoes in an air fryer basket and cook at 200°C (400°F) for about 20 minutes. This method ensures the sweet potatoes cook through and become tender while developing a slightly golden exterior, preparing them perfectly for the candied coating. (Lightly greasing the basket can help achieve a crispier texture.)

While the sweet potatoes are in the air fryer, bring the prepared syrup mixture to a simmer over medium heat. Once it starts to bubble around the edges, reduce the heat to low and let it thicken into a syrupy consistency. Keep an eye on it to prevent it from reducing too much.

Once the sweet potatoes are done in the air fryer and have a nice golden color, carefully transfer them into the simmering syrup. Gently toss and coat each piece evenly with the syrup. Continue to cook over low heat for another 1-2 minutes, stirring occasionally, until the candies are glossy and well-coated. This ensures they become wonderfully ‘mattang’!
