I made stir-fried zucchini after a long time. This is a super simple stir-fried zucchini dish, perfect for mixing with rice when seasoned with gochujang.

  • 1 zucchini (medium size)
  • 1/2 onion (medium size)

Prepare all your ingredients. Wash and thoroughly dry the zucchini and onion. Remove the stem from the red chili pepper, deseed it, and slice it thinly.

Cut the zucchini in half lengthwise, then slice it into half-moon shapes about 0.5 cm thick. Be careful not to slice them too thinly, as they might fall apart when stir-fried.

Peel the onion and slice it into thin strips, about 0.5 cm thick. If you slice them too thinly, they might become mushy when cooked.

In a bowl, combine the sliced zucchini and onion. Add 1 Tbsp of salt and mix well. Let it sit for about 10 minutes to draw out moisture. This step helps to make the zucchini and onion more crisp. After salting, rinse them lightly under cold running water and squeeze out as much excess water as possible with your hands. This is a crucial step for texture!

Heat 1 Tbsp of cooking oil in a pan over medium-high heat. Add the squeezed zucchini and onion. Toss in the minced garlic and salted shrimp. Stir-fry quickly for about 2-3 minutes until the zucchini starts to turn slightly translucent. The key is to stir-fry rapidly to maintain a pleasant texture, ensuring the zucchini doesn’t become too soft.

Turn off the heat. Add 1 tsp of sesame oil and 1 tsp of ground sesame seeds. Gently toss everything together to combine. Add the sliced red chili pepper at the end for a splash of color and extra flavor.

Taste and adjust seasoning if necessary, adding a little more salted shrimp or salt to your preference. It tasted so delicious after making it again! It’s also fantastic served over a bowl of hot rice for a simple meal.
