Simple Stir-Fried Udon
Easy Stir-Fried Udon Recipe Using Saengsaeng Udon (Super Simple!)
Craving stir-fried udon but don’t want a complicated recipe? This version made with Saengsaeng Udon is perfect for those days! It’s incredibly easy and satisfying.
Essential Ingredients
- 1 pack Saengsaeng Udon noodles
- 1/4 to 1/2 onion (adjust to your preference)
- 5-6 shrimp (frozen or fresh)
- 2 eggs
- Pinch of black pepper
Cooking Instructions
Step 1
First, thinly slice the onion. Heat 1-2 tablespoons of cooking oil in a pan over medium heat. Add the sliced onions and stir-fry until they become translucent. This process will bring out the natural sweetness of the onions, enhancing the dish’s flavor.
Step 2
If using frozen shrimp, thaw them and pat dry. Add the shrimp to the pan with the onions and stir-fry until they turn pink and are cooked through.
Step 3
Sprinkle a pinch of black pepper over the ingredients in the pan. This will add a lovely aroma and depth of flavor. Adjust the amount to your liking.
Step 4
Once the shrimp are nearly cooked, push the ingredients to one side of the pan. Crack the two eggs into the empty space. Quickly scramble the eggs by stirring them with chopsticks or a spatula until they are just cooked.

Gently mix the scrambled eggs with the stir-fried onions and shrimp. Ensure everything is well combined.

Add the dried vegetable flakes (soup mix) that came with the Saengsaeng Udon to the pan. These flakes will add texture and more flavor to your stir-fried udon.

Now, it’s time to prepare the udon noodles. Bring a pot of water to a boil. Add the Saengsaeng Udon noodles and cook for just about 1 minute. Be careful not to overcook them, as they will continue to cook in the pan and can become mushy if boiled for too long.

Drain the udon noodles slightly and add them directly to the pan with the other ingredients. Pour in the liquid soup base that came with the Saengsaeng Udon. If you haven’t added many extra ingredients, you might want to adjust the amount of soup base to suit your taste.
Step 9
Stir-fry everything together over medium-low heat for about 1-2 minutes. Ensure the sauce coats the noodles evenly and the flavors meld together.
Step 10
Transfer the delicious stir-fried udon to a serving plate. For an extra special touch, you can top it with a fried egg. A sprinkle of bonito flakes at the end will add a wonderful smoky aroma and taste. Enjoy your quick and easy homemade stir-fried udon!
