Don’t throw away leftover samgyeopsal or moksal from your fridge! Transform it into a delicious stir-fried pork and kimchi dish. Adding tender tofu creates a wonderful Tofu Kimchi meal. The tangy kimchi and rich pork flavor combine perfectly, making it an excellent side dish for rice or a fantastic pairing with makgeolli (Korean rice wine). Here’s a super simple recipe you can whip up in no time.

Main Ingredients

  • 2 pieces Pork Neck or Pork Belly (approx. 150-200g)
  • 5 Tbsp Kimchi (fermented kimchi recommended)
  • 1 block Tofu
  • 1 stalk Scallion (approx. 5cm length)

Cooking Instructions

First, prepare the pork. Place the 2 pieces of pork neck or belly in a frying pan without adding any oil. Grill over medium heat until golden brown on both sides. The pork will release plenty of its own fat.

Once the pork is cooked, cut it into bite-sized pieces. Cutting it too small might cause it to break apart during stir-frying, so aim for a moderate size.

Now it’s time to add the kimchi. Add 5 tablespoons of kimchi and 1-2 tablespoons of kimchi juice to the cooked pork. Stir-fry over medium heat until well combined. The flavors of the cooked kimchi and pork will meld beautifully.

Add 1 tablespoon of sugar to the stir-frying kimchi and pork. If your kimchi is very sour, you can add a little more sugar, or use plum syrup instead of sugar. Plum syrup helps balance the sourness and richness while adding a savory note. For extra flavor, sprinkle a pinch of black pepper, if desired.

Drizzle in the sesame oil just before turning off the heat. Add 1 teaspoon of sesame oil and lightly stir-fry over residual heat to preserve its fragrant aroma. After turning off the heat, cover the pan and let it cook briefly with the residual heat.

Slice the block of tofu into desired pieces and microwave for 1-2 minutes to warm it up. This ensures the tofu is warm when served with the stir-fried pork and kimchi. Arrange the warmed tofu attractively on a plate, then generously spoon the prepared stir-fried pork and kimchi over it. Finally, garnish with chopped scallions and 1 teaspoon of toasted sesame seeds for a visually appealing Pork and Tofu Kimchi. Enjoy this simple yet incredibly delicious dish!
