  • 300g frozen pork shoulder (ask butcher to slice thinly)
  • 1/4 head of well-fermented napa cabbage kimchi
  • 1 stalk of green onion

Seasoning
  • 1 Tbsp minced garlic
  • 2 Tbsp soy sauce
  • 2 Tbsp sugar (adjust to taste)
  • Pinch of black pepper
  • Drizzle of sesame oil
  • Sprinkle of sesame seeds

Cooking Instructions

Step 1

Visit your local butcher and ask them to slice the frozen pork shoulder as thinly as possible. Slicing it thinly ensures a tender texture and quick cooking when stir-fried with kimchi.

Step 2

If your well-fermented napa cabbage kimchi has a lot of filling, gently brush it off. Then, cut the kimchi into bite-sized pieces that are easy to eat. Cutting it too large can make it difficult to stir-fry, so aim for a manageable size.

Step 3

In a large bowl, combine the cut kimchi and the thinly sliced frozen pork shoulder. Add the minced garlic, soy sauce, sugar, and black pepper. Mix everything thoroughly with your hands, ensuring the meat and kimchi are evenly coated with the seasonings. You can adjust the amount of sugar based on the kimchi’s sourness and your personal preference.

Step 4

Wash the green onion and slice it diagonally (on the bias). This cut helps release more flavor when stir-fried and makes for a more appealing presentation.

Step 5

Heat a pan over medium-high heat. Add the seasoned pork and kimchi mixture to the pan, along with the sliced green onion. Stir-fry the ingredients until they are evenly cooked. Since the pork shoulder is thinly sliced, it won’t require a long cooking time. If you are using thicker cuts of pork, make sure to cook it thoroughly until it is fully done.

Step 6

Continue to stir-fry for about 7-8 minutes, or until everything is cooked through and looks delicious. Once the ingredients are well-cooked and have a nice color, turn off the heat. Finish by drizzling with sesame oil and sprinkling with sesame seeds for an extra layer of nutty aroma. Your delicious stir-fried pork and kimchi is now ready!
