Many people enjoy a simple soy sauce and egg rice bowl for a quick meal. For my husband, who prefers noodles over rice, I made these soy sauce and egg noodles:D. It’s a super easy recipe ready in just 10 minutes!

Noodle Ingredients

  • Somen noodles (about the size of a 100-won coin, approx. 1 serving)
  • 2 eggs

Seasoning Ingredients

  • 2 Tbsp soy sauce
  • 1 Tbsp oligo syrup (sweetness can be adjusted)
  • 1 Tbsp plum extract (for a sweet and sour flavor)
  • 1 Tbsp vinegar (for a clean finish)
  • 1 Tbsp sesame oil (for nutty aroma)
  • A pinch of red pepper flakes (adjust to taste)
  • A pinch of black pepper (for enhanced flavor)

Cooking Instructions

Step 1

First, bring a generous pot of water to a rolling boil. Once the water is boiling, add the somen noodles. Prepare about one serving, roughly the size of a 100-won coin.

When the noodles start to boil and rise to the surface, add about 1/3 cup of cold water. Repeat this process three times. This technique helps to cook the noodles to a chewy, firm texture without them becoming mushy.

Once the noodles are cooked, rinse them under cold running water. It’s crucial to gently rub and rinse the noodles with both hands, almost like hand-washing clothes, to prevent them from breaking. This step removes excess starch and ensures a delightfully chewy noodle.

While the noodles are rinsing, cook two eggs in a separate pan. Aim for a sunny-side-up style with a runny yolk – this will blend beautifully with the soy sauce dressing for an extra creamy and delicious finish.

In a bowl, combine 2 Tbsp soy sauce, 1 Tbsp oligo syrup, 1 Tbsp plum extract, 1 Tbsp vinegar, and 1 Tbsp sesame oil. Whisk well to create the sauce. For a touch of heat, you can add a pinch of red pepper flakes and black pepper to your preference.

Drain the cooked noodles thoroughly and place them into the bowl with the prepared soy sauce dressing. Toss gently to ensure every strand of noodle is evenly coated with the savory sauce. The key is to mix until well-combined.
