The stars of this dish are the soft tofu and eggs! With these two main ingredients, you’re halfway to a delicious meal. It’s the perfect first step towards a simple yet satisfying dish.

First, crack the two eggs into a bowl and whisk them thoroughly to create an egg mixture. Since we’ll be adding seasonings later, there’s no need to add salt at this stage. For a smoother texture, you can whisk them lightly with a fork or whisk.

Carefully remove the packaging from the soft tofu. Using a knife, cut the tofu into 2-3 large pieces. Avoid cutting it too small, as it might break apart during the stir-frying process. Keeping larger chunks will help maintain a better texture.

To save time while cooking, you can mix the sauce ingredients in advance. In a small bowl, combine 1 Tbsp soy sauce and 0.5 – 1 Tbsp oyster sauce. Stir well. If you find the oyster sauce flavor too strong, you can reduce the amount of oyster sauce and add a little more soy sauce. (Alternatively, you can add the seasonings directly to the pan during cooking.)

If you enjoy a bit of heat, finely chop half a Korean green chili pepper. While I initially cut it larger, it’s best to mince it finely so the spiciness is evenly distributed and the texture blends well into the dish.

Now, let’s start stir-frying! Lightly grease a pan or wok with cooking oil or sesame oil. Place the cut soft tofu into the hot pan. From this point on, it’s important to work quickly over medium-low heat! If you prefer less moisture from the tofu, you can gently pat it dry with a paper towel before adding it to the pan.

Pour the whisked egg mixture around the edges of the pan where the tofu is. Use a chopstick or spoon to gently break apart the tofu pieces into bite-sized portions (similar to scrambled egg consistency) and mix them with the egg mixture. If you prefer a neater presentation, you can cut the tofu into smaller pieces before adding. I simply broke it apart with a spoon for ease.

As the eggs begin to set, add the chopped scallions and minced green chili (if using). Gently stir everything together with the tofu and eggs until well combined. The key is to mix gently to ensure all ingredients are evenly distributed.

Once the eggs are almost fully cooked, pour the prepared sauce mixture into the center of the pan. The natural moisture released from the tofu will combine with the sauce, creating a delicious, moist coating for the ingredients.

Stir everything together thoroughly to ensure the sauce is evenly distributed. Your delicious Soft Tofu and Egg Stir-Fry is now complete! Sprinkle with toasted sesame seeds for a final touch, if desired. I mashed everything together quite a bit because I planned to eat it mixed with rice, but feel free to plate it more artistically if you prefer!

The flavor is perfectly balanced, and the preparation is incredibly simple, yet the taste is surprisingly delightful! The natural liquid from the tofu creates a wonderfully moist and flavorful sauce, similar to 초당순두부 (Chodang Sundubu) but with the added richness of eggs. I used sesame oil to enhance the aroma, but it’s also delicious when cooked with regular cooking oil. Serve it over rice or enjoy it as a standalone side dish!
