- 1/5 carrot, finely diced
- 1/4 onion, finely diced
- 1/2 king oyster mushroom, finely diced
Sauce & Seasoning- 2 Tbsp minced garlic
- 2 Tbsp chicken stock
- 2/3 cup tomato pasta sauce
- Pinch of dried basil
- Pinch of grated Parmesan cheese
- 1 Tbsp finely chopped celery
- 2 Tbsp minced garlic
- 2 Tbsp chicken stock
- 2/3 cup tomato pasta sauce
- Pinch of dried basil
- Pinch of grated Parmesan cheese
- 1 Tbsp finely chopped celery
Cooking Instructions
Step 1
If using frozen shrimp, thaw them by rinsing under cold water until pliable. Pre-cooked shrimp or peeled and deveined shrimp can be used directly.
Step 2
Bring a large pot of water to a rolling boil. Add the spaghetti noodles, laying them out flat initially. As they soften, gently push them down into the pot with a cooking utensil or chopsticks, stirring occasionally to prevent sticking. Cook according to package directions until al dente.
Step 3
Once the pasta is cooked (usually around 7-10 minutes), carefully drain it in a colander. Set aside, allowing excess water to drip off.
Step 4
Prepare the vegetables: wash the carrot, onion, and king oyster mushroom thoroughly. Dice them into small, uniform pieces. This ensures they cook evenly.
Step 5
Heat a generous amount of cooking oil in a wide pan over medium heat. Once the pan is hot, add all the diced vegetables (carrot, onion, mushroom). Sauté them evenly until they become translucent and slightly golden, bringing out their natural sweetness.
Step 6
Add the thawed shrimp and minced garlic to the pan with the sautéed vegetables. Stir-fry together until the shrimp turns pink and is fully cooked, about 1-2 more minutes. You’ll smell the fragrant aroma of garlic as it cooks.
Step 7
Add the drained spaghetti noodles to the pan. Season with salt and pepper to taste. Gently toss everything together, ensuring the pasta, vegetables, and shrimp are well combined.
Step 8
For an extra depth of flavor, we’re adding chicken stock to this recipe. Stir well to incorporate all the ingredients smoothly. Once everything is nicely coated, transfer the pasta to a serving plate.
Step 9
Pour a generous amount of tomato pasta sauce into the pan. You can adjust the quantity based on your preferred sauce consistency.
Step 10
Gently stir-fry to coat the pasta and other ingredients evenly with the tomato sauce. Plate the finished pasta attractively. Finish with a sprinkle of dried basil, grated Parmesan cheese, and the finely chopped celery for an extra layer of flavor and freshness. Enjoy your delicious meal!
