I had a little bit of curry left at home, so I decided to make this! ~ haha

Ingredients

  • Curry 200g (approx. 2 servings)
  • 1 Onion
  • 2 Eggs
  • 1 Cheongyang chili pepper (optional, adjust to your spice preference)
  • A little Butter

Seasoning

  • A little Cooking oil

Cooking Instructions

Step 1

1. First, thinly slice the onion after peeling it. In a separate bowl, crack the eggs and lightly beat them with a fork or whisk until smooth. Remove the chalazae (the white stringy bits) for a silkier texture.

2. Heat a pot over medium-low heat. Add 1 tablespoon of cooking oil and about 1 teaspoon of butter. Once the butter has melted, add all the sliced onions to the pot.

3. Sauté the onions, stirring occasionally to prevent burning, for about 3-4 minutes, or until they become translucent and release a sweet aroma. Properly cooking the onions will enhance the curry’s flavor.

4. Once the onions are nicely sautéed, push them to one side of the pan to create space. Pour the beaten eggs into the empty space. As the edges of the egg begin to set, gently scramble them with chopsticks or a spatula until about 70% cooked. Turn off the heat at this stage; overcooking will make them dry.

5. Add the 200g of curry directly into the same pan with the sautéed onions and partially scrambled eggs. Stir everything together to combine.

6. Continue to cook for another 1-2 minutes, stirring to ensure the curry is smooth and well-integrated. Add a little water as needed to reach your desired consistency. Start with about 1/4 cup of water and adjust from there.

7. When the curry reaches your preferred thickness, add the finely chopped Cheongyang chili pepper (if using). Stir gently to combine. The spicy kick will complement the curry beautifully!

8. Once all ingredients are well mixed and heated through, your delicious scrambled curry is ready! Serve it generously over a bowl of hot rice.

9. (Tip) For an extra touch, sprinkle with black pepper to taste, or serve with a fried egg on top for an even more satisfying meal.
