First, crack the 2 eggs into a bowl and add a pinch of salt. Gently whisk the eggs with a fork or a whisk until well combined. Adding a little salt at this stage enhances the flavor of the eggs. Wash the chives, pat them dry, and then chop them into bite-sized pieces, about 2cm long.

Heat a little cooking oil in a non-stick pan over medium-low heat. Pour in the whisked egg mixture. Gently stir the eggs with chopsticks or a spatula to create scrambled eggs. Avoid overcooking; aim for a soft, fluffy texture. Remove from heat while the eggs are still slightly moist for the best tenderness.

Remove the scrambled eggs from the pan and set aside. In the same pan (add a touch more oil if needed), add the chopped chives. Stir everything together just to combine.
