Ingredients
  • Napa Cabbage 100g
  • Korean Green Chili Pepper 1
  • Scallion 1/3 stalk
  • Minced Garlic 1 Tbsp
  • Broth 4 cups (Anchovy-Kelp broth recommended)
  • Fish Sauce 1/2 Tbsp

Cooking Instructions

Step 1

First, prepare a clear and refreshing broth. In a pot, add 4 cups of water, dried anchovies, and kelp. Simmer for about 10 minutes, then strain out the solids. For a deeper flavor, you can dissolve about 1/2 Tbsp of soybean paste into this broth. (Alternatively, you can skip the soybean paste for a lighter soup).

Step 2

Add the Napa cabbage, cut into bite-sized pieces (about 3-4cm), to the prepared broth. Once the cabbage starts to soften slightly, add the chopped scallions and the Korean green chili pepper, thinly sliced after removing the seeds. Adding the chili pepper will give the soup a pleasant kick and make it even more refreshing.

Step 3

Finally, add the fish sauce (1/2 Tbsp) to season the soup. Fish sauce is key to its savory depth, but you can substitute it with soy sauce if preferred.
