Main Ingredients

  • 2 large eggs
  • 1-2 handfuls green onions (approx. 50g)
  • 2-3 Tbsp cooking oil
  • 1 bowl of cold cooked rice (approx. 200g)

Cooking Instructions

Step 1

To make your egg fried rice fresh and flavorful, start by washing and preparing your green onions. Finely chop both the white and green parts. The aromatic essence of the green onions will greatly enhance the overall taste of the fried rice.

Step 2

Heat a wok or a deep frying pan over medium-low heat. Add a generous amount of cooking oil, about 2-3 tablespoons. Add all the chopped green onions and stir-fry for about 1-2 minutes until their fragrance is released, creating ‘scallion oil’. The scallions will turn slightly golden, adding a deeper flavor.

Step 3

Once you can smell the delicious scallion oil, push the cooked scallions to one side of the pan to create space. Crack the 2 prepared eggs into the empty space. You can lightly season the eggs with pepper at this point. As the eggs begin to set, gently scramble them with chopsticks or a spatula until they are softly cooked, about 70-80% done.

Step 4

When the scrambled eggs are about 70-80% cooked, carefully add about 1/2 teaspoon of soup soy sauce (or regular soy sauce) to the edge of the pan where the scallions are. Let it sizzle for a moment to release its aroma; this adds another layer of savory depth. Gently mix the eggs and scallions together before the eggs are fully cooked.

Step 5

Reduce the heat to low. Add one bowl of cold cooked rice (about 200g). Use a spatula to break up any clumps of rice, ensuring each grain is coated with the egg, scallions, and oil as you stir-fry. Once the rice grains are separate and slightly toasted, add 1 tablespoon of oyster sauce around the edge of the pan. Stir everything together thoroughly until well combined. Your delicious egg fried rice is ready! It tastes best served immediately while hot.
