Today, I’m making a delicious pork neck steak using pork neck, which is both affordable and incredibly tasty. This dish is commonly found in popular restaurants, but the recipe is surprisingly simple, making it easy to recreate at home. It’s perfect for when you have guests over, for a housewarming party, or even for a casual evening with a glass of beer or wine. The sweet and savory flavor is also a big hit with children.

Steak Ingredients

  • 400g Pork Neck
  • 1 Tbsp Butter
  • Salt to taste
  • Pepper to taste

Sauce

  • 2 Tbsp Sugar
  • 2 Tbsp Mirin (or Rice Wine)
  • 3 Tbsp Store-bought Tonkatsu Sauce
  • 2 Tbsp Store-bought Oyster Sauce

Cooking Instructions

Step 1

First, let’s make the special sauce that will add a wonderful flavor to the steak. In a bowl, combine 2 tablespoons of sugar, 2 tablespoons of mirin, 3 tablespoons of store-bought tonkatsu sauce, and 2 tablespoons of store-bought oyster sauce. Whisk well with a whisk or spoon until the sugar is dissolved and there are no lumps. The sauce doesn’t need to be cooked separately; simply mix the ingredients well.

Next, prepare the pork neck, about 400g. Using thick-cut pork neck for steak will make it even more delicious. Lightly pound the meat on both sides with the back of a knife or the side of the blade. This tenderizes the meat, making it easier to chew and allowing the seasoning to penetrate better.

Now it’s time for seasoning. Evenly sprinkle salt on both sides of the tenderized pork neck, followed by pepper, according to your preference. Proper seasoning is the foundation of a great steak, so be thorough.

Heat a frying pan over high heat, then add the seasoned pork neck and cook. Cooking over high heat quickly sears the surface, sealing in the juices. Cook until both sides are nicely browned.

Once the pork neck is golden brown on both sides, push it to one side of the pan. Add 1 tablespoon of butter to the empty space and let it melt. As the butter melts, spoon it over the steak (basting) to infuse it with flavor. This will make the steak even more delicious with the rich, buttery aroma.

When the meat is almost cooked, the sauce might not reduce properly due to the oil and butter in the pan. Gently wipe the excess oil from the bottom of the pan with a paper towel. This will help the sauce adhere better to the meat and create a cleaner taste.

After wiping the oil, pour the prepared special steak sauce into the pan and reduce the heat to medium-low. Once the sauce begins to bubble, add the steak back into the pan and turn it to coat with the sauce. Let it simmer until the sauce thickens and coats the meat with a glossy sheen. Your delicious steak is ready! Enjoy it with warm rice or a side salad.
