Simple Pork Belly & Tofu Braise (Baepae Dubu Jorim)

A straightforward and flavorful braised dish featuring thinly sliced pork belly and soft tofu, seasoned with a savory and slightly spicy sauce. This recipe is perfect for a quick and satisfying meal, especially when served with rice.
Main Ingredients- 150g thinly sliced pork belly (Baepae)
- 1 block (approx. 300g) firm tofu
- 1 stalk large green onion (Scallion)
- 3 Korean chili peppers (Cheongyang chili peppers)
- 1 Tbsp minced garlic
Sauce- 1/3 cup soy sauce (approx. 60ml)
- 1 cup water (approx. 200ml)
- 1 Tbsp fish sauce
- 2 Tbsp Korean chili flakes (Gochugaru)
- 2 Tbsp perilla oil (Deulgireum)
- 1 Tbsp sugar
- 2 Tbsp salt or sesame salt
- Pinch of black pepper
- 1/3 cup soy sauce (approx. 60ml)
- 1 cup water (approx. 200ml)
- 1 Tbsp fish sauce
- 2 Tbsp Korean chili flakes (Gochugaru)
- 2 Tbsp perilla oil (Deulgireum)
- 1 Tbsp sugar
- 2 Tbsp salt or sesame salt
- Pinch of black pepper
Cooking Instructions
Step 1
Prepare all your ingredients before you begin cooking. Cut the thinly sliced pork belly into bite-sized pieces, about 5cm long. Slice the firm tofu into approximately 1.5-2cm thick pieces. Slice the large green onion diagonally, and finely chop the Korean chili peppers after removing the seeds. (If you prefer it spicier, you can increase the number of chili peppers or leave the seeds in.)
Step 2
In a small bowl, combine all the sauce ingredients: 1/3 cup soy sauce, 1 Tbsp sugar, 1 cup water, 2 Tbsp Korean chili flakes, 1 Tbsp fish sauce, 2 Tbsp salt or sesame salt, 2 Tbsp perilla oil, and a pinch of black pepper. Stir well until the sugar is dissolved to make the sauce. (Making the sauce in advance simplifies the cooking process. You can also add the ingredients directly into the pan.)
Step 3
In a wide pan, spread the thinly sliced pork belly in a single layer at the bottom. Then, arrange the sliced tofu on top of the pork belly, slightly overlapping if necessary. (Adding more tofu is also delicious! Feel free to adjust the amount of tofu to your liking.)
Step 4
Evenly sprinkle the chopped Korean chili peppers, green onions, and minced garlic over the pork belly and tofu. Pour the prepared sauce evenly over everything in the pan. Start cooking over high heat.
Step 5
Once the sauce begins to boil, reduce the heat to medium. Using a spatula or spoon, gently stir from the edges to mix the ingredients and sauce without breaking the tofu. Continue to simmer until the liquid has reduced by about one-third. As the liquid reduces, the flavors will deeply infuse into the ingredients.
Step 6
Continue to simmer until the sauce is nicely reduced and slightly thickened. Turn off the heat and your dish is ready! For an extra appealing presentation, sprinkle some toasted sesame seeds on top. Enjoy this delicious braised pork belly and tofu with a warm bowl of rice!
