Main Ingredients- 200g Pork, stew cut (cut into bite-sized pieces)
- 1/2 Onion (finely minced or thinly sliced)
- 2 Eggs
- 1/2 Tbsp Minced Garlic
- Pinch of Black Pepper
- Vegetable Oil
Sauce Ingredients- 1 Tbsp Oyster Sauce
- 1 Tbsp Soy Sauce
- 1/2 Tbsp Sugar
- 1/2 Tbsp Tonkatsu Sauce (optional, adds umami)
- 1 Tbsp Oyster Sauce
- 1 Tbsp Soy Sauce
- 1/2 Tbsp Sugar
- 1/2 Tbsp Tonkatsu Sauce (optional, adds umami)
Cooking Instructions
Step 1
Finely mince the onion for maximum flavor release. Thinly slicing it is also an option, depending on your preference.
Step 2
Heat a wok or large skillet over medium heat and add a generous amount of vegetable oil. Add the minced garlic and sauté until fragrant, about 30 seconds to 1 minute. Be careful not to burn the garlic.
Step 3
Once the garlic is fragrant, add the 200g of pork. Increase the heat to medium-high and stir-fry until the pork is browned and cooked through. Ensuring the pork is thoroughly cooked is key.
Step 4
When the pork is mostly cooked, add the minced onion to the wok. Continue to stir-fry together until the onion becomes translucent and tender.
Step 5
Once the onion is softened, it’s time to prepare the sauce. Add 1 tablespoon of oyster sauce to the wok.

Next, add 1 tablespoon of soy sauce.

Finally, add 1/2 tablespoon of sugar. Stir well to combine all the sauce ingredients with the pork and onions. Continue to cook for another minute, allowing the flavors to meld. Stir frequently to prevent sticking or burning.
Step 8
After the sauce has coated the pork and onions, push the mixture to one side of the wok. Crack the 2 eggs into the empty space and scramble them until they are just cooked. Don’t overcook the eggs.
Step 9
Gently mix the scrambled eggs with the pork and onion mixture. If you find the dish needs a little more flavor or saltiness, add 1/2 tablespoon of tonkatsu sauce. This adds a wonderful depth of flavor. If you don’t have tonkatsu sauce, you can omit this step or adjust with a little more soy sauce.
Step 10
Prepare a bowl of freshly cooked rice. Fill your serving bowl generously with warm rice.
