Ingredients- 150-200g fresh seasonal tomatoes
- 2 Tbsp soy sauce
- 2 Tbsp plum extract (maesilcheong)
- 2 Tbsp vinegar

Begin by washing the fresh seasonal tomatoes thoroughly and patting them dry. Next, cut the tomatoes into bite-sized pieces, such as quarters or sixths, and carefully place them into an airtight container. Handle the tomatoes gently to avoid crushing them.

Now, let’s prepare the flavorful pickling liquid. In a small bowl, combine 2 tablespoons of soy sauce, 2 tablespoons of sweet plum extract (maesilcheong), and 2 tablespoons of tangy vinegar. Stir well until all the ingredients are thoroughly mixed to create a delicious dressing.
Step 3
Pour the prepared pickling liquid evenly over the tomatoes in the container. Seal the container tightly with its lid. Gently shake the container several times to ensure the liquid coats all the tomato pieces. Let the container sit at room temperature for 24 hours, allowing the flavors to meld and the tomatoes to pickle beautifully.
