My husband often asks for ‘basic’ side dishes, and what better example than a classic pan-fried tofu stew? This recipe focuses on a rich, savory sauce without any fish or meat, allowing the tofu’s subtle flavor to shine. It’s a straightforward yet deeply satisfying dish that’s perfect for everyday meals. Begin by slicing the firm tofu (about 200g) into approximately 1cm thick pieces. Gently pat the tofu slices dry with a paper towel to remove excess moisture; this will help prevent splattering oil during frying. Heat a generous amount of vegetable oil in a non-stick skillet over medium heat. Carefully place the tofu slices into the hot oil and pan-fry them until both sides are golden brown and lightly crispy. Frying the tofu beforehand gives it a firmer texture, preventing it from breaking apart during the stewing process and maintaining a beautiful shape.

While the tofu is frying, prepare the braising sauce directly in the same skillet (after removing the tofu, or set the tofu aside). Combine 2 Tbsp soy sauce, 1/2 Tbsp minced garlic, 1 Tbsp oligosaccharide, 1 Tbsp plum extract, 1 Tbsp gochugaru, 1/2 tsp black pepper, and 1 Tbsp sesame oil in the skillet. Stir these ingredients together well. Add 1/2 cup of kelp and anchovy broth (or water) and finely chop the white parts of 1 green onion stalk, adding it to the sauce. Mix everything thoroughly to create a delicious braising liquid.

Arrange the pan-fried tofu slices back into the skillet. Pour the prepared braising sauce evenly over the tofu. Reduce the heat to medium-low and let the stew simmer gently. The goal is for the sauce to penetrate the tofu and for the flavors to meld together. Gently shake the pan occasionally or spoon the sauce over the tofu to ensure even cooking and flavor distribution.

Continue simmering, being careful to prevent the sauce from burning as it reduces. Once the sauce has thickened to your liking and coats the tofu beautifully, it’s time for the final touch. Finely chop the green parts of the reserved green onion and sprinkle them over the stew. Finally, add 1 Tbsp of sesame seeds for extra aroma and a nutty flavor. Give it a gentle stir to combine. Your simple and delicious tofu stew is now ready to be enjoyed with a warm bowl of rice!
