  • 1 Onion (medium size)
  • 1 Egg
  • 180g Rice (about 1 bowl)
  • 2 Tbsp Cooking Oil

Cooking Instructions

First, peel and thoroughly wash the onion. Then, thinly slice it lengthwise into strips about 0.5 cm thick. Slicing them to a moderate thickness is recommended, as they might break apart if too thin when stir-fried.

Crack the egg into a clean bowl and beat it well with a fork or chopsticks until the yolk and white are completely mixed. You don’t need to add any salt at this stage.

In a small bowl, combine 4 Tbsp water, 1/2 Tbsp sugar, 1/2 Tbsp vinegar, and 1/2 Tbsp soy sauce. Stir well until the sugar is completely dissolved to make the sauce. Preparing the sauce beforehand makes the stir-frying process much smoother.

Heat 2 Tbsp of cooking oil in a frying pan over medium heat. Add all the sliced onions to the pan and stir-fry until they become translucent.

Once the onions are softened and translucent, and their edges start to turn slightly brown, pour the prepared sauce into the pan. Continue to stir-fry for another 1-2 minutes, allowing the sauce to reduce and coat the onions evenly. You’ll notice a delicious aroma as the onion’s sweetness blends with the savory soy sauce.

Finally, carefully pour the beaten egg mixture over the onions or along the sides of the pan. Wait for the egg to set gently, then gently scramble it with the onions, or simply let it cook undisturbed. Turn off the heat, serve over a bowl of hot rice, and enjoy!
