  • 1/2 medium onion
  • 2 large eggs

Seasoning Ingredients

  • 2 Tbsp Soy Sauce (or similar dark soy sauce)
  • 1 tsp Oyster Sauce
  • 1 Tbsp Chili Oil
  • 1 tsp Brown Sugar (white or brown sugar can be used)
  • 1 small Korean soju cup (approx. 50ml) water

Cooking Instructions

First, crack the 2 eggs into a clean bowl. Use a fork or whisk to beat them until the yolks and whites are well combined. You don’t need to whisk them too vigorously.

Peel the onion and rinse it under cold water. Cut it in half, then slice it thinly into strips and place it in a pan. You can adjust the thickness of the slices to your preference.

Add the soy sauce (2 Tbsp), oyster sauce (1 tsp), chili oil (1 Tbsp), and sugar (1 tsp) to the pan with the sliced onions. Stir gently with a spoon to coat the onions evenly with the seasonings. Then, pour in the water (1 soju cup’s worth) and bring it to a boil over high heat. Once the mixture starts to bubble, proceed to the next step.

Pour the beaten eggs into the simmering sauce mixture. You can gently push the sauce to one side of the pan to create a space for the eggs, which helps the sauce and eggs mix together more evenly as they cook.

Before the eggs are fully cooked, gently stir them with chopsticks or a spatula until they are softly scrambled. Be careful not to over-stir, as this can break up the eggs too much. Turn off the heat as soon as you see soft curds forming. The key is to keep them moist and tender.

Prepare a bowl with warm rice. Spoon the delicious onion and egg mixture over the rice. Your tasty Onion and Egg Rice Bowl is now complete! For an extra touch, you can garnish with shredded seaweed or chopped green onions if desired.
